Instructions

Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water. Drain and set aside.
Prepare the Turkey:
While the pasta is cooking toss the turkey strips with olive oil Cajun seasoning salt and black pepper until evenly coated.
Sauté the Turkey:
Heat a large skillet over medium high heat. Add the seasoned turkey and sauté for 6 8 minutes stirring occasionally until golden and cooked through. Remove turkey from the skillet and set aside.
Make the Sauce Base:
Lower the heat to medium. In the same skillet melt the butter. Add the minced garlic and cook for 1 minute until fragrant.
Simmer the Cream:
Pour in the heavy cream stirring to combine. Bring to a gentle simmer and cook for 2 3 minutes.
Add Cheese and Season:
Stir in the Parmesan cheese and nutmeg. Continue stirring until the cheese is fully melted and the sauce is smooth. Season with salt and pepper to taste.
Combine:
Add the cooked pasta and turkey to the sauce tossing to coat. If the sauce is too thick add reserved pasta water a little at a time until desired consistency is reached.
Serve:
Remove from heat. Garnish with fresh parsley and extra Parmesan if desired. Serve immediately.
