01 - Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package directions until al dente. Reserve 1/2 cup pasta water, drain, and set aside.
02 - In a mixing bowl, combine turkey strips with olive oil, Cajun seasoning, salt, and black pepper. Toss until evenly coated.
03 - Heat a large skillet over medium-high heat. Add the seasoned turkey and sauté for 6 to 8 minutes, stirring occasionally, until golden brown and cooked through. Remove turkey from skillet and set aside.
04 - Reduce heat to medium. In the same skillet, melt unsalted butter. Add minced garlic and cook for 1 minute until fragrant.
05 - Pour in heavy cream and stir to combine. Bring to a gentle simmer and cook for 2 to 3 minutes.
06 - Stir in grated Parmesan cheese and ground nutmeg. Continue cooking, stirring until the cheese has melted and the sauce is smooth. Season with additional salt and black pepper to taste.
07 - Add cooked pasta and sautéed turkey to the skillet. Toss to coat well. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
08 - Remove skillet from heat. Sprinkle with fresh parsley and extra grated Parmesan as desired. Serve immediately.
