Ingredients

  • Dill pickles: 1 cup, finely diced
  • Roma tomatoes: 1 cup, seeded and finely diced
  • Red onion: 1/2 cup, finely diced

  • Fresh lime juice: 2 tablespoons (about 1 lime)
  • Lime zest: 1 teaspoon
  • Kosher salt: 1/4 teaspoon, or to taste
  • Freshly ground black pepper: 1/8 teaspoon

Instructions

Combine vegetables:
In a medium bowl, combine the diced pickles, tomatoes, red onion, and jalapeño.
Add herbs & citrus:
Add the chopped cilantro, lime juice, and lime zest. Mix well.
Season salsa:
Season with salt and pepper. Stir to combine and taste. Adjust seasoning as needed.
Meld flavors:
Let the salsa sit for 5 to 10 minutes to allow flavors to meld, or serve immediately.
Serve:
