01 - Preheat oven to 425°F. Arrange peeled and cut carrots in a mixing bowl. Toss thoroughly with olive oil, salt, and freshly ground black pepper to coat evenly.
02 - Spread carrots in a single layer on a rimmed baking sheet. Roast for 20 minutes until beginning to soften and develop caramelized edges.
03 - Remove baking sheet from oven. Drizzle maple syrup evenly over carrots and sprinkle with chopped pecans. Toss gently to combine.
04 - Return carrots to oven and roast for 10 minutes until carrots are tender and pecans are golden and fragrant.
