13 - Sprinkles, as desired

# Steps to Follow:

01 - Preheat oven to 350°F. Line a 9x9-inch baking pan with parchment paper.
02 - In a medium bowl, whisk together flour, baking powder, baking soda, and salt until evenly mixed.
03 - In a large bowl, beat unsalted butter, light cream cheese, and sugar until mixture is light and fluffy.
04 - Beat in egg, Greek yogurt, and vanilla extract until smooth and homogenous.
05 - Gradually add dry ingredients to the wet mixture, stirring gently until just combined.
06 - Spread batter evenly in prepared pan. Bake for 13 to 15 minutes, until edges turn lightly golden and a toothpick inserted in center comes out clean.
07 - Allow cookie base to cool completely, then crumble into fine pieces in a large bowl.
08 - Add an additional 2 tablespoons of Greek yogurt to the crumbs. Mix thoroughly until the mixture holds together when pressed, adding more yogurt 1 teaspoon at a time as needed.
09 - Roll the mixture into 1-inch diameter balls and place on a parchment-lined baking sheet. Chill in freezer for 20 to 30 minutes until firm.
10 - In a microwave-safe bowl, melt white chocolate or candy melts with coconut oil (if using) in 30-second intervals, stirring until smooth.
11 - Dip the tip of each cake pop stick into the melted chocolate, then insert into each chilled cake ball to secure.
12 - Dip each cake pop into the melted chocolate, coating evenly; gently tap off excess. Immediately decorate with sprinkles if desired.
13 - Stand the cake pops upright in a styrofoam block or cake pop stand. Let coating set at room temperature or refrigerate until firm.
