01 - Slice the beef into thin strips and chop the bell peppers and onion.
02 - Heat extra virgin olive oil in a large skillet over medium heat. Add chopped onions and bell peppers; sauté until softened, about 5 to 7 minutes.
03 - Increase heat to medium-high and add the sliced beef. Season with salt and pepper, and cook until browned, about 3 to 5 minutes.
04 - Reduce heat to low, lay provolone slices over the beef mixture, cover, and let cheese melt completely.
05 - Evenly spoon the beef and cheese mixture onto each tortilla. Roll up each tortilla tightly.
06 - Place roll-ups seam-side down in the skillet. Cook over medium heat until golden brown on all sides, about 3 to 4 minutes total.
07 - Slice the roll-ups and serve hot.
