01 - Preheat oven to 425°F and line a large baking sheet with parchment paper.
02 - Arrange fries in a single layer on the prepared baking sheet and bake according to package instructions or until golden and crisp, approximately 25–30 minutes.
03 - While fries bake, combine honey, Sriracha, melted butter, soy sauce, rice vinegar, and minced garlic in a small saucepan over low heat. Stir until the sauce is well blended and warmed through, about 2–3 minutes. Remove from heat.
04 - Transfer hot fries to a large ovenproof casserole dish. Drizzle honey Sriracha sauce over fries and toss gently to evenly coat.
05 - Sprinkle shredded mozzarella and cheddar cheese evenly over the sauced fries.
06 - Place casserole dish back in the oven and bake for 8–10 minutes, until cheese is fully melted and bubbly.
07 - Remove from oven. Top with sliced scallions, cilantro, and red chili if desired. Serve immediately.
