# Steps to Follow:
01 - In a medium bowl, combine steak cubes with olive oil, kosher salt, black pepper, and dried Italian herbs. Toss until evenly coated and let rest for 10 minutes.
02 - Heat 2 tablespoons olive oil in a large skillet over medium heat. Add quartered potatoes, season with salt and pepper, and cook while stirring occasionally for 15 minutes until golden and crispy. Transfer to a plate and keep warm.
03 - Increase skillet heat to medium-high. Add steak cubes in a single layer, working in batches if necessary. Sear for 2 to 3 minutes per side until browned and cooked through. Remove and set aside.
04 - Reduce heat to medium. Add butter to the skillet and once melted, stir in minced garlic and smoked paprika. Sauté for 1 minute until aromatic.
05 - Return potatoes and steak to the skillet, tossing to coat evenly with garlic butter sauce. Cook for 1 to 2 minutes until heated through. Remove from heat, garnish with fresh parsley and chives, and serve immediately.
