Triple Cheese Sourdough Melt (Print Version)

Thick sourdough bread layered with three cheeses, golden and melty, perfect for a quick comforting meal.

# What You'll Need:

→ Bread & Cheese

01 - 4 slices thick sourdough bread
02 - 2 slices sharp cheddar cheese
03 - 2 slices provolone cheese
04 - 1/2 cup shredded mozzarella cheese

→ Spreads & Fats

05 - 2 tablespoons unsalted butter, softened
06 - 1 tablespoon mayonnaise (optional)

# Steps to Follow:

01 - Spread butter evenly on one side of each sourdough slice. Optionally, spread a thin layer of mayonnaise on the opposite side for added crispiness.
02 - Place two slices of bread buttered side down on a clean surface. Add one slice sharp cheddar, one slice provolone, and half the shredded mozzarella on each.
03 - Top with the remaining bread slices, buttered side up.
04 - Preheat a large skillet or griddle over medium-low heat.
05 - Place sandwiches in the skillet and cook 3 to 5 minutes per side, pressing gently, until bread is golden brown and cheese is melted. Flip carefully to avoid filling spillage.
06 - Transfer sandwiches to a cutting board, let rest for 1 minute, then cut and serve hot.

# Additional Tips::

01 -
  • The sourdough gets this incredible shatteringly crisp exterior that stays crunchy even after the cheese has cooled down just enough to eat
  • Three different cheeses mean every bite has complex flavor instead of just one note cheese experience
  • Ready in twenty minutes flat but tastes like something from a fancy diner
02 -
  • Medium low heat is non negotiable high heat burns the bread before the middle gets melty and sad
  • Letting the sandwiches rest for that minute prevents all the hot cheese from exploding out when you cut them
  • The mayonnaise trick sounds strange but once you try it you will never go back to butter alone
03 -
  • Use a cast iron skillet if you have one for the most even heating and best crust development
  • Grate your own mozzarella instead of buying pre shredded for better melting
  • Keep the heat low and slow every time
