# What You'll Need:

→ Mac & Cheese Base

01 - 2 cups cooked elbow macaroni
02 - 1 cup pumpkin puree
03 - 1 1/2 cups sharp cheddar cheese, shredded
04 - 1/2 cup Parmesan cheese, grated
05 - 1 teaspoon smoked paprika
06 - 1 teaspoon garlic powder
07 - Salt, to taste
08 - Black pepper, to taste

→ Coating & Assembly

09 - 2 large eggs, beaten
10 - 1 1/2 cups panko breadcrumbs
11 - Cooking spray

# Steps to Follow:

01 - Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
02 - In a large mixing bowl, combine cooked macaroni, pumpkin puree, shredded cheddar, grated Parmesan, smoked paprika, garlic powder, salt, and black pepper. Stir until thoroughly integrated.
03 - Scoop out portions of the mixture and shape into small, even balls approximately 1 1/2 inches in diameter.
04 - Dip each ball into the beaten eggs, then coat thoroughly with panko breadcrumbs.
05 - Arrange coated mac & cheese balls on the prepared baking sheet. Mist lightly with cooking spray. Transfer to the oven and bake for 20–25 minutes, or until golden brown and crisp.
