- In a large mixing bowl, whisk together all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly blended.
- In a separate bowl, whisk milk, large eggs, melted butter, and vanilla extract until smooth and combined.
- Pour the wet mixture over dry ingredients and gently stir until just incorporated; avoid overmixing, as a few lumps are fine.
- Heat a non-stick skillet or griddle over medium heat and brush lightly with butter to coat the surface.
- Pour 1/4 cup of batter for each pancake onto the hot skillet. Cook until bubbles appear on the surface and edges begin to set, about 2 minutes. Flip and continue cooking 1 to 2 minutes longer, until golden brown. Repeat with remaining batter.
- Arrange pancakes on serving plates. Use banana slices and marshmallows to create eyes, chocolate chips or blueberries for pupils, strawberry halves or whipped cream for mouths, and decorate with sprinkles, chocolate spread, or nut butters for additional monster features.
- Present immediately with extra syrup on the side, if desired, and encourage creativity with decorations.
