01 - 1 small round pumpkin (approximately 2 lbs), peeled, seeded, and sliced into 1/2-inch pieces
02 - 1 red bell pepper, seeded and thinly sliced
03 - 1 yellow bell pepper, seeded and thinly sliced
04 - 1 small zucchini, sliced into rounds
05 - 1 small red onion, thinly sliced into wedges

→ Seasonings

06 - 2 tablespoons olive oil
07 - 1 teaspoon smoked paprika
08 - 1/2 teaspoon ground cumin
09 - Salt and freshly ground black pepper, to taste

→ Garnishes

10 - 2 tablespoons fresh parsley, chopped
11 - 1 tablespoon pumpkin seeds (pepitas), toasted

# Steps to Follow:

01 - Set the oven to 400°F and line a baking sheet with parchment paper.
02 - Place the pumpkin slices in a large circle on the baking sheet, shaping a pumpkin face.
03 - Use red and yellow bell pepper strips to form the eyes, nose, and mouth. Fill spaces with zucchini rounds and red onion wedges to add color.
04 - Drizzle olive oil over the arranged vegetables and sprinkle evenly with smoked paprika, ground cumin, salt, and pepper.
05 - Bake in the oven for 25 to 30 minutes until the vegetables are tender and slightly caramelized.
06 - Carefully move the roasted arrangement to a serving platter, preserving the jack-o-lantern design.
07 - Sprinkle with chopped fresh parsley and toasted pumpkin seeds before presenting.
