→ Liquids & Oils

18 - 2 tablespoons olive oil
19 - 2 cups low-sodium chicken broth

# Steps to Follow:

01 - Heat olive oil in a large heavy-bottomed pot over medium heat. Add the chopped onion and diced red bell pepper. Sauté for 3 to 4 minutes until vegetables are softened.
02 - Stir in the minced garlic and jalapeño pepper. Cook for 1 minute, allowing the aromatics to release their fragrance.
03 - Add diced chicken to the pot and season with salt, black pepper, chili powder, ground cumin, smoked paprika, and ground coriander. Cook for 4 to 5 minutes, stirring occasionally, until chicken is lightly browned.
04 - Add diced tomatoes with juices, drained black beans, corn kernels, and chicken broth. Stir well and bring the mixture to a simmer.
05 - Reduce heat to medium-low, cover the pot partially, and let the chili simmer for 15 minutes.
06 - Stir in diced mango, lime juice, and half of the chopped cilantro. Simmer uncovered for an additional 10 minutes, allowing the mixture to thicken and flavors to meld.
