02 - 1/4 cup Greek yogurt
03 - 2 tablespoons mayonnaise
04 - 2 tablespoons crumbled feta cheese (optional)

→ Vegetables & Herbs

05 - 1 ripe avocado, sliced
06 - 1 small cucumber, julienned
07 - 1 cup baby spinach leaves
08 - 1/2 cup fresh parsley leaves
09 - 1/4 cup fresh chives
10 - 2 tablespoons fresh tarragon or basil
11 - 2 tablespoons chopped green onion
12 - 1 small garlic clove
13 - 1 tablespoon fresh lemon juice

→ Pantry

14 - 4 large whole wheat or spinach tortillas
15 - Salt and freshly ground black pepper, to taste
16 - 1 tablespoon olive oil (optional)

# Steps to Follow:

01 - In a blender or food processor, combine Greek yogurt, mayonnaise, feta cheese if using, parsley, chives, tarragon or basil, green onion, garlic, lemon juice, olive oil, salt, and pepper. Blend until smooth and vibrant green. Taste and adjust seasoning.
02 - Briefly warm the tortillas in a dry skillet or microwave until pliable.
03 - Lay a tortilla flat and spread a generous spoonful of green goddess dressing down the center.
04 - Add baby spinach, sliced chicken, avocado, cucumber, and extra herbs as desired. Drizzle with an additional spoonful of dressing.
05 - Fold the sides of the tortilla inward and roll tightly. Repeat for remaining tortillas.
06 - Slice each wrap in half and serve immediately, or wrap tightly and refrigerate up to 24 hours.

# Additional Tips::

01 -
  • It comes together in less than 30 minutes but tastes like you spent the afternoon cooking.
  • The green goddess dressing is addictive—you'll find yourself using it on salads, roasted vegetables, and anything else you can think of.
  • It's filling enough for lunch but won't leave you feeling weighed down for the rest of your afternoon.
02 -
  • Don't make the dressing more than a few hours ahead—the herbs start losing their bright color and the flavors flatten.
  • If your avocado is even slightly hard, wait a day; a mealy avocado will disappoint you and you'll blame the recipe instead of the fruit.
  • Warm tortillas are non-negotiable, and parchment keeps them from getting soggy if you're packing them for later.
03 -
  • Don't slice your wraps until you're ready to eat them—keeping them whole maintains structure and keeps the filling from sliding out.
  • If you're using store-bought rotisserie chicken, shred it yourself instead of using pre-shredded; it'll be more tender and less stringy.
