01 - Crack the eggs into a bowl and whisk with salt and freshly ground black pepper until fully combined.
02 - Melt 1 tablespoon butter in a nonstick skillet over medium-low heat. Pour in the eggs and cook, gently stirring, until softly set. Remove from heat.
03 - Slice each croissant horizontally. Layer a slice of ham on the bottom half, followed by scrambled eggs and one slice of cheese.
04 - Melt the remaining butter in a large skillet over medium heat. Place the assembled croissant sandwiches in the skillet, cover, and heat until the cheese is melted and croissants are crisp, about 2–3 minutes per side. Alternatively, toast in a preheated oven at 350°F (175°C) for 5 minutes.
05 - Serve warm, optionally garnished with fresh spinach or sliced avocado.
