01 - Preheat oven to 425°F. Line a baking sheet with parchment paper or lightly grease with oil.
02 - In a large mixing bowl, add shredded chicken, softened cream cheese, shredded cheddar, sour cream, chopped green onions and cilantro, lime juice, cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Stir until mixture is well blended.
03 - Place one tortilla on a flat surface. Spoon about 1/4 cup of chicken filling along the lower third of the tortilla.
04 - Tightly roll tortilla into a cylinder and set seam-side down on the baking sheet.
05 - Continue filling and rolling remaining tortillas. Arrange all taquitos, seam-side down, on the prepared baking sheet.
06 - Lightly spray the tops of the taquitos with cooking spray or brush with vegetable oil to encourage browning.
07 - Bake in preheated oven for 18 to 20 minutes, until taquitos are golden and crisp.
08 - Remove taquitos from oven and serve immediately, accompanied by salsa, guacamole, or extra sour cream.
