# Steps to Follow:

01 - In a large mixing bowl, combine softened cream cheese and sour cream. Blend with a hand mixer or whisk until smooth and fully combined.
02 - Add whole kernel corn and cream-style corn to the mixture. Stir gently to incorporate without breaking down kernels.
03 - Fold in shredded cheddar cheese, green onions, jalapeños, garlic powder, onion powder, salt, and pepper. Mix until evenly distributed throughout.
04 - Taste the dip and adjust seasoning or jalapeño level according to preference.
05 - Transfer the dip to a serving bowl for cold service or to a baking dish if preparing warm.
06 - Preheat oven to 350°F. Transfer dip to baking dish and bake for 20 to 25 minutes until bubbling and lightly golden on top.
07 - Remove from oven and allow to cool for 5 minutes to set slightly before serving.
08 - Transfer to serving vessel and serve with tortilla chips for dipping.

# Additional Tips::

01 -
  • The contrast between the sweet corn kernels and spicy jalapeños creates this impossible-to-stop-eating quality that will have your guests hovering around the serving table.
  • You can make it ahead of time and serve it either warm or cold, which saved me during last-minute hosting when the in-laws showed up unannounced.
02 -
  • If youre taking this to a gathering, slightly underbake it at home then finish it in your hosts oven - it creates that fresh-from-the-oven effect that makes people think youre a wizard.
  • The dip actually tastes better the next day when the flavors have had time to meld, so dont hesitate to make it ahead and reheat or serve cold.
03 -
  • If youre serving this at a party where the dip might sit out for a while, place your serving dish inside a larger bowl filled with ice to keep it chilled and food-safe without it becoming watery.
  • For the baked version, sprinkle an extra handful of cheese and a few sliced jalapeño rings on top during the last 5 minutes of baking for that Instagram-worthy cheese pull and pop of color.
