01 - Combine cottage cheese and eggs in a blender or use a hand mixer and process until a smooth, uniform batter develops.
02 - Preheat a non-stick skillet over medium heat. Pour half of the batter onto the skillet to form a round flatbread approximately 6 to 8 inches in diameter. Cook for 2 to 3 minutes until edges begin to set and the underside achieves a light golden color. Using a spatula, flip the flatbread and cook an additional 1 to 2 minutes until fully set. Repeat with remaining batter.
