# Steps to Follow:

01 - In a large skillet over medium heat, melt 3 tablespoons butter. Add the chopped onion, sliced mushrooms, and diced red bell pepper. Sauté for 4 to 5 minutes until vegetables are softened.
02 - Sprinkle in the flour and cook, stirring constantly, for 1 minute until the mixture is smooth.
03 - Gradually whisk in the whole milk and chicken broth, stirring continuously until the sauce is smooth and begins to thicken, about 3 to 4 minutes.
04 - Add the diced cooked chicken, thawed peas, heavy cream, salt, black pepper, paprika, and dried thyme. Simmer gently for 5 to 7 minutes, stirring occasionally, until heated through and slightly thickened.
05 - Meanwhile, toast bread slices in a toaster or oven and spread each slice with a little butter.
06 - Place a slice of buttered toast on each plate. Spoon the chicken and vegetable mixture generously over the toast. Top with fresh chopped parsley if desired.
