- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- Heat olive oil in a skillet over medium heat. Add onion, garlic, and bell pepper. Sauté for 3 to 4 minutes until softened.
- Add ground turkey to the skillet. Cook, breaking it up with a spoon, until the meat is no longer pink, about 5 to 6 minutes.
- Stir in Cajun seasoning, smoked paprika, salt, and black pepper. Cook for 2 additional minutes, ensuring the spices are distributed evenly.
- Remove skillet from heat. Mix in mozzarella, cheddar, and parsley until the cheese is evenly combined and slightly melted. Let the mixture cool briefly.
- Cut a deep pocket into each roll without fully slicing through.
- Generously stuff each roll with the prepared turkey filling. Arrange stuffed rolls on the parchment-lined baking sheet.
- Mix melted butter with garlic powder, then brush the tops of each roll. Bake for 12 to 15 minutes, until the tops are golden and the cheese is melted.
- Allow the rolls to cool slightly before serving. Enjoy warm.
