01 - Preheat oven to 425°F. Line a baking sheet with parchment paper and place a wire rack on top.
02 - In a large mixing bowl, thoroughly toss the chicken wings with baking powder, kosher salt, and black pepper until well coated.
03 - Arrange the seasoned wings in a single layer on the wire rack. Bake for 35 to 40 minutes, flipping halfway through, until the skin is crisp and golden.
04 - While wings bake, blend black garlic, soy sauce, honey, balsamic vinegar, toasted sesame oil, unsalted butter, activated charcoal, ginger, and cayenne pepper (if using) until smooth using a blender or food processor.
05 - Transfer glaze mixture to a small saucepan and heat on medium-low until slightly thickened and just bubbling, 2 to 3 minutes. Remove from heat.
06 - Place baked wings in a large bowl. Add warm glaze and toss until the wings are evenly coated and glossy.
07 - Arrange glazed wings on a platter. Finish with toasted sesame seeds and sliced scallions if desired. Serve immediately.
